Note: These assume ideal storage. Heat, light, or smells turn your fancy chocolate bars into sad, flavorless bricks fast.
Big brands load bars with:
Heat (melts cocoa butter → "bloom" + ruined texture)
Light (triggers oxidation → stale flavors)
Smells (chocolate absorbs odors like a sponge!)
Do THIS instead:
Seal tightly in an airtight container.
Store at 15-18°C (60-65°F) – a cool, dark cupboard beats the fridge!
Keep away from coffee, spices, or perfumes.
Need to refrigerate? Wrap bars twice (airtight bag → sealed container) to prevent condensation. Thaw sealed before opening!
Fat Bloom: Whitish streaks? Harmless cocoa butter separation. Still edible – but texture suffers.
Sugar Bloom: Gritty, dusty surface? Moisture dissolved + recrystallized sugar. Toss it.
Off Smells/Tastes: Rancid oil, cardboard, or sour notes? Say goodbye.
