Then comes the real craft. As chocolate makers, we handle every single step ourselves, right here. We carefully roast cacao beans in small batches, tweaking the heat and time to tease out the best flavors without burning them. We winnow to remove the husks, leaving pure cacao nibs. Those nibs get stone ground for ages until they transform into silky chocolate liquor – the pure heart of chocolate.

Here's a big difference: we keep it simple. Our craft chocolate usually needs just cacao beans, a bit of cane sugar, and maybe some extra cocoa butter for texture. We skip the emulsifiers common in big-brand bars. Instead, we use patient conching – basically stirring and aerating the chocolate for hours or even days. This naturally develops incredible smoothness and depth, turning it into truly premium chocolate.

The final magic trick? Hand tempering. We carefully control the chocolate's temperature to get those cacao butter crystals just right. This gives our bars that satisfying glossy shine and perfect snap. Pour it into molds, let it cool, and voila – a bar of luxury chocolate ready to blow your mind.

And the delicious part? Flavor! While we love featuring pure single-origin chocolate, we love to experiment with chocolate flavor pairing too!
