Gourmet chocolate is much more than just gorgeous packaging and expensive price tags: gourmet chocolate is ultimately based on high-quality ingredients and artisanal technique, but moreover, is about exploration and creativity. At Cacao & Cardamom, we redefine gourmet chocolate by finding the balance between a heritage of creating chocolate, and an innovative mind. Here is how we raise the bar:
Gourmet chocolate starts with premium cacao beans which we source from micro-lot farms in Ecuador, Madagascar, and Venezuela. We value the Criollo and Trinitario varieties because they boast the most flavor attributes, i.e. fruity, floral and nutty. All of the cacao we use is sourced directly from farmers and/or cooperatives ensuring the farmers were fairly/well compensated and cacao is organically farmed.
